On the palate, the intense cocoa flavor takes center stage at first, accompanied by a distinct bitterness. Unusually for a chocolate with such a high cocoa content, it remains tender and smooth rather than dry. Gradually, subtle fruity notes emerge, reminiscent of tropical fruits, lending the cocoa a lively quality. The single-origin cocoa used in this chocolate comes from the Colombian Amazon Basin, beyond the Andes. There, we work with select farms and associations of small cooperatives that cultivate special varieties of fine cacao.
