What makes a praline?
A praline is a bite-sized chocolate specialty with a characteristic filling - for example, ganache, nougat, marzipan, nuts or fruit compositions. The chocolate content must be at least 25% for a product to be officially called a praline. Due to their elaborate production and variety of fillings, pralines are considered the pinnacle of the chocolatier's art.
The first forerunners of pralines were served in France as early as the 17th century - originally as caramelized almonds or later as filled chocolate creations for courtly society. Today, they stand for fine confectionery, creativity and artisan chocolate art worldwide.
