The tradition of Baumkuchen

Baumkuchen - a classic that is an integral part of German culture. The first surviving Baumkuchen recipes date back to the 15th century, when Baumkuchen was a popular wedding cake, especially in Nuremberg and Frankfurt. Over time, however, the Baumkuchen recipe continued to evolve until the master confectioner Johann Andreas Schernikow published the "classic" Salzwedeler Baumkuchen recipe in 1807, which is still known today.

The term "Baumkuchen" (tree cake) can be traced back to the way tree cakes were once made, as they were often baked on skewers, sticks or wooden beaters.

The structure of this special pastry is also fitting. The Baumkuchen dough is spread in many layers, which are baked one by one. This creates the typical tree ring look of the Baumkuchen cake.

Depending on their personal preference, our customers can either buy the Baumkuchen with dark fine cocoa chocolate "Rausch Plantagen Peru 60%", with light fine cocoa chocolate "Rausch Plantagen Venezuela 43%", or with white chocolate.

Where does the original Baumkuchen come from?

Baumkuchen was baked over 200 years ago and served on special occasions or festivities. In 1807, the master confectioner Johann Andreas Schernikow brought a delicious recipe from Lüneburg to his home town of Salzwedel.

Where does the name Baumkuchen come from?

The forerunners of today's Baumkuchen were often baked on wooden skewers, sticks or wooden sticks. This is where the name Baumkuchen, i.e. cake baked on wooden sticks, is thought to come from.

What does the Baumkuchen have to do with a tree?

The dough is spread in around 10 to 20 individual layers, usually by dipping, and baked in layers. As a result, the layers in the finished cake resemble the annual rings of a tree.
