Origin

A Newcomer

The single-origin cocoa of the Sambirano Valley is a newcomer. More than a hundred years ago, its original varieties came from a botanical garden in Java to northwestern Madagascar. This cross produced beans that are often pink-white in colour and, after fermentation, are light-coloured, as they hardly exist anywhere else. In the sheltered Sambirano river valley, where more rain falls than in the dry surrounding area, a cocoa of great liveliness ripens. Single-origin cocoa from Madagascar makes up only a very small share of the world harvest. A true one-off for our single-origin chocolates.

Fair cultivation

Cocoa from small family gardens

In the Sambirano Valley, cocoa grows mainly on small family farms, in mixed cultivation under shade trees. Diverse gardens can support the soil and cocoa cultivation. The cocoa pods ripen fully and thus develop a lively aroma. We source our Madagascar cocoa as single-origin from exactly this region. Our aim is to source the cocoa directly here again as well.

Dried with patience

The Sambirano Valley is one of the wettest cocoa-growing areas of all. The river of the same name and the surrounding highlands keep the air humid, even when the dry season has long since begun elsewhere. This is exactly what makes drying the real art. After harvest, the light cocoa beans first ferment in multi-stage wooden boxes. They are then moved to raised drying beds, airy above the damp ground, where they dry in the sun of the drier months. If rain approaches, the beans are protected. This patience with light, delicate cocoa gives the single-origin cocoa from the valley its character.

In the north of Madagascar, single-origin cocoa grows between vanilla and pepper. This is how it develops its fine spiciness and distinctive aroma. Cream, selected single-origin cocoa and the precise balance of the 55% cocoa content ensure a pleasant melt and delicate berry nuances.
