A plate of potato soup brings back childhood memories. Our recipe is vegan and flavored with aromatic fine flavor cocoa. Enjoy your meal!
Ingredients:
1.5 kg Floury potatoes
5 shallots
1 Soup greens
2L water
Additional spices:
Oil
Curry
Turmeric
Salt
'Cocoa balls' with grater
Preparation:
- Peel the potatoes and cut into cubes.
- Cut the shallots, also into cubes.
- Peel and chop the greens.
- Sauté the shallots and greens in the oil, add the spices and brown well.
- Deglaze with the water.
- Add the potatoes and cook until soft.
- Season to taste with the spices and blend briefly with a hand blender, but only coarsely.
- Finally, season to taste and garnish with the grated cocoa balls.
Tip:
Add finely chopped chives if desired.
