VEGAN POTATO SOUP

VEGANE KARTOFFELSUPPE

A plate of potato soup brings back childhood memories. Our recipe is vegan and flavored with aromatic fine flavor cocoa. Enjoy your meal!

Ingredients:

1.5 kg Floury potatoes
5 shallots
1 Soup greens
2L water
Additional spices:
Oil
Curry
Turmeric
Salt
'Cocoa balls' with grater

Preparation:

  1. Peel the potatoes and cut into cubes.
  2. Cut the shallots, also into cubes.
  3. Peel and chop the greens.
  4. Sauté the shallots and greens in the oil, add the spices and brown well.
  5. Deglaze with the water.
  6. Add the potatoes and cook until soft.
  7. Season to taste with the spices and blend briefly with a hand blender, but only coarsely.
  8. Finally, season to taste and garnish with the grated cocoa balls.

Tip:

Add finely chopped chives if desired.
