Recipe for 100 cinnamon stars
Utensils: star cookie cutter
Preparation time: 2 hours
Dough ingredients:
250 g marzipan paste
250 g nut semolina
400 g sugar
10 g cinnamon
90 g breadcrumbs
60 g almond semolina
100 g egg whites
500 g drinking chocolate pearls ' Rausch Plantagen Ecuador 70 %'
Ingredients glaze:
40 g egg whites
400 g powdered sugar
Preparation:
- Knead all the ingredients together using a hand mixer.
- Roll out the dough to a thickness of about 1 cm.
- In the meantime, prepare the icing: Mix the egg white and powdered sugar together and brush the rolled-out dough with it.
- Then cut out stars and bake in the oven at around 130°C for 13 minutes.
- Leave the cookies to cool and temper the chocolate in the meantime. Important: The chocolate must be tempered to around 30°C.
- Then dip the bottom side of the cookies into the chocolate.
