CINNAMON STARS WITH DARK FINE COCOA CHOCOLATE

In the Christmas bakery... Nothing beats the smell of home-baked cinnamon stars, refined with dark fine cocoa chocolate.

Recipe for 100 cinnamon stars
Utensils: star cookie cutter
Preparation time: 2 hours

Dough ingredients:

250 g marzipan paste
250 g nut semolina
400 g sugar
10 g cinnamon
90 g breadcrumbs
60 g almond semolina
100 g egg whites
500 g drinking chocolate pearls ' Rausch Plantagen Ecuador 70 %'

Ingredients glaze:

40 g egg whites
400 g powdered sugar

Preparation:

  1. Knead all the ingredients together using a hand mixer.
  2. Roll out the dough to a thickness of about 1 cm.
  3. In the meantime, prepare the icing: Mix the egg white and powdered sugar together and brush the rolled-out dough with it.
  4. Then cut out stars and bake in the oven at around 130°C for 13 minutes.
  5. Leave the cookies to cool and temper the chocolate in the meantime. Important: The chocolate must be tempered to around 30°C.
  6. Then dip the bottom side of the cookies into the chocolate.

Tip:
Feel free to provide a little more powdered sugar.
