These wonderfully fragrant chai cookies get you in the Christmas spirit. Delicate oriental spices and melt-in-the-mouth fine cocoa decorations combine to create a harmonious blend. A simple recipe that reinterprets classic Christmas baking in a deliciously new way.
Recipe for approx. 30 cookies
Preparation time: 15 min. + 20 min. baking time + 1 hour resting time
Ingredients:
1.5 teaspoons chai spices (such as cinnamon, ginger, cardamom, cloves, black pepper)
140 g butter
80 g raw cane sugar
1 packet vanilla sugar
200 g wheat flour (type 550)
1 pinch salt
40 g fine cocoa chocolate Block Costa Rica 75 % or Block Venezuela 43 %
Powdered sugar for decoration
Preparation:
1. Place the chai spice mix, butter, sugar, and vanilla sugar in a mixing bowl and beat until fluffy.
2. Add the flour and salt and stir in.
3. Knead the ingredients into a smooth dough and leave to rest in the refrigerator for 4 hours.
4. Preheat the oven to 160 °C (convection).
5. Roll out the dough on a lightly floured work surface with a rolling pin to a thickness of approx. ½ cm and cut out cookies with cookie cutters.
6. Bake the cookies in the oven for 8-10 minutes until golden brown and leave to cool on a wire rack.
7. Chop the chocolate bar into small pieces and melt in a small pot over a water bath.
8. Put the chocolate in a piping bag or freezer bag and decorate the cookies with chocolate.
9. Place the cookies back on the cooling rack and let the chocolate dry.
10. If desired, the chai cookies can also be sprinkled with powdered sugar.
Served with a cup of hot tea, coffee, or cocoa, these spicy cookies are the perfect accompaniment for cold days and cozy afternoons.
