Chocolate peanut muffins with dark fine cocoa chocolate

Schokoladen-Erdnuss-Muffins mit dunkler Edelkakao-Schokolade

Muffins are small mini cakes that are easy to bake. This is not the only reason why they are popular with young and old alike. We have come up with a special version with dark cocoa chocolate and peanuts. Have fun baking and enjoying.

Recipe for 12 muffins

Muffin batter ingredients:

190 g wholemeal wheat flour
100 g fine flavor cocoa chocolate 'Rausch Plantagen Costa Rica 75 %
30 g fine flavor cocoa powder
7 g baking powder
1/2 teaspoon baking soda
250 ml buttermilk
1 egg
80 g brown sugar
80 ml rapeseed oil

Muffin filling ingredients:

160 g peanut butter with chunks
60 g powdered sugar
55 g butter
Also: 100 g peanuts, salted and roasted for decorating.

Preparation:

Preheat the oven to 160° C.

Melt the butter in a bain-marie. Meanwhile, chop the fine cocoa chocolate and set aside.

Mix the peanut butter with the powdered sugar and melted butter to make a peanut butter filling.

Place the flour in a bowl with the chopped dark chocolate, dark cocoa powder, baking powder and bicarbonate of soda and mix well.

Beat the egg with the sugar until frothy. Now slowly add the buttermilk and oil to the egg and sugar mixture and then stir in the dry ingredients.

Fill the muffin tin with approx. 1/3 of the muffin batter, top each with 1 tbsp of the peanut butter filling and fill up with the rest of the batter.

Finally, sprinkle the salted peanuts over the unbaked muffins and bake for 30 minutes.
