BARBECUE RECIPE WITH FINE FLAVOR COCOA NIBS

GRILLREZEPT MIT EDELKAKAO NIBS

This special barbecue recipe gives meat an unmistakable aroma. The fine flavoured cocoa nibs add a sweet and tangy note that harmonizes perfectly with smoky salt and other spices. Here is a recipe that takes grilled meat and vegetables to the next level.

Ingredients for the spice:

  • Fine cocoa nibs
  • Smoky salt
  • Paprika powder (hot or sweet)
  • Black or red pepper
  • Chili flakes

Preparation of the spice:

  1. Place the fine cocoa nibs, smoky salt, paprika powder, pepper and chili flakes in a mortar.
  2. Crush the mixture until it is fine and well blended.

Prepare the grilled meat:

  1. Season meat (e.g. beef steak, chicken breast or pork chop) with the spice mixture just before grilling.
  2. Grill the meat to taste.
  3. Sprinkle with the spice mix again just before the meat is cooked. If desired, turn the meat again and grill briefly.

Grill tomatoes with garlic oil:

  1. Cut the tomatoes in half.
  2. Brush the cut side with garlic oil or dip in garlic oil.
  3. Place the tomatoes cut side down on the grill. Use a grill tray to minimize liquid leakage.

Wild garlic butter:

  1. In a blender or food processor, combine wild garlic, salt, pepper and softened butter.
  2. Place the wild garlic butter in the fridge to firm up.

Side dish recommendation: Baked potato:

  1. Pre-cook large potatoes until they are almost done.
  2. Wrap the potatoes in aluminum foil and place on the grill.
  3. After grilling, cut the potatoes open and fill with the wild garlic butter.

Tip:

  • Serve the grilled meat together with the grilled tomatoes and baked potatoes.
